Sometimes dinner is a chore. Often we end up eating the same things over and over again like pasta or breakfast for dinner like eggs, waffles, etc. What is your ‘default dinner’? We have found that when we don’t plan our meals, we do not eat as well or we spend more money eating out. We both enjoy eating, and like to try new recipes. This past week, we discovered a new favorite chicken dish that I know you will enjoy too! The easy crisp and tender chicken with light scrumptious creamy sauce melts in your mouth and delights your taste buds.

Lemon Butter Chicken
Prep Time: 10 minutes
Cook Time: 40 minutes
Yield: 8 Servings
Ingredients
- 4 – 6 bone in, skin-on chicken thighs
- 1 Tablespoon paprika [enough to cover the chicken]
- Kosher salt and pepper to taste
- 3 Tablespoons, unsalted butter, divided
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- ¼ cup freshly grated Parmesan
- Juice of 1 lemon [I use 2 drops of my Young Living Lemon Essential Oil]
- 1 teaspoon dried thyme [I use citrus and basil rub]
- 6 cups fresh baby spinach [My husband is not a spinach fan, but he LOVED the green in this dish]
Instructions
Preheat oven to 400°F.
Season chicken thighs with paprika, salt and pepper, to taste.
Melt 2 tablespoons butter in a large oven-proof skillet over medium high heat.
Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; drain excess fat and set aside.
Melt remaining tablespoon butter in the skillet. Add garlic. Cook, stirring frequenting, for about 1-2 minutes until fragrant.
Stir in chicken broth, heavy cream, Parmesan, lemon juice and thyme.
Bring to a boil. Reduce heat, stir in spinach, and simmer for about 3-5 minutes until the spinach has wilted and the sauce has thickened slightly. Return chicken to the skillet.
Place in oven and roast until completely cooked through, reaching an internal temperature of 175°F. About 25-30 minutes.
Serve immediately. You can also serve over rice, noodles or pasta.
